Noni’s Fried Spaghetti
You may be thinking that pasta alone is a heavy meal, but fried spaghetti? This is by far one of my favorite signature Noni dishes. And while the type of pasta used is up to you, Noni prefers a tubular noodle such as penne or rigatoni because it holds up during the frying. Using jarred tomato sauce eases the workload, but don’t forget to add the additional seasonings to kick up the taste of the meatsauce. Serve the fried spaghetti with a big salad and Monster Cookies for dessert!
Yield: 4-6 servings Prep Time: 15 min Cook Time: 20 min 1 lb. rigatoni or penne pasta Begin by first cooking the pasta in a pot of boiling water until it is al dente. Saute the ground turkey or ground beef in a pan. Add the jar of sauce along with the oregano, Splenda and 2 Tablespoons of garlic powder. Allow the sauce mixture to simmer. Drain the cooked pasta. Melt the butter in a frying pan. Add the cooked pasta to the melted butter and shake the remaining 2 Tablespoons of garlic powder plus the salt over the noodles. Fry the pasta until it is crispy. Plate the crisped pasta and spoon the meatsauce over the top.
