Mini macaroons are great plain, drizzled with semisweet chocolate or topped with chocolate and chopped pecans. Any way you make them, they’re addicting, and I guarantee you’ll be popping these pocket-sized treats all day and night.

Mini Macaroons

Yield: 3-4 dozen

Prep Time: 10 min

Cook Time: 10 min

Ingredients:

6 cups coconut flakes
1 can (14 oz.) sweetened condensed milk
2 teaspoons pure vanilla extract
1 cup semisweet chocolate chips

Directions:

Preheat the oven to 350ºF.

Combine the coconut flakes, sweetened condensed milk and vanilla in a large bowl.

Use a small spoon to scoop out roughly 3 Tablespoons of the mixture and press it into a ball.

Place each of the small rounds on a baking sheet lined with parchment paper.

Bake for 8 to 10 minutes until the tops are golden brown.

Remove the baked macaroons from the oven and let cool completely.

Melt the chocolate chips in a saucepan then drizzle the chocolate over the cooled macaroons with a fork.
