Agave Nectar
Agave nectar has been gaining popularity as a healthy alternative to sugar. The all-natural sweetener was named a “Food Trend for 2009” and has been used in everything from cheesecakes and banana fritters, to muffins and hot cheese appetizers. Agave nectar provides numerous health benefits and is most well known for its low glycemic index, which prevents blood sugar levels from spiking.
Agave nectar is the consistency of honey and is extracted from a cactus-like plant native to Mexico. It comes in both light and dark forms, with the light form having a more neutral, mild flavor and the dark (amber) form having a stronger, caramel-like flavor.
