Add a fruity twist to a campfire classic with this quick-fix recipe for The Best Berry S’mores!

Few foods define the summer snacking scene quite like s’mores. The gooey, toasted mallow, the melted chocolate-of-choice and the classic crunch of the graham cracker to hold it all together.

If you’ve tuned in to Instagram Stories any time in the last year or so, you’ll know there is one dessert combo and one dessert combo only that I eat day after day after day…

I make what my husband has deemed “Smashed Raspberry Sundaes” on a weekly basis. And they’re as simple as they sound. A scoop (or four) of vanilla bean ice cream layered with semisweet chocolate chips and fresh raspberries that I’ve smashed into a purée-like consistency.

It’s one of those desserts that couldn’t be more simple, and also couldn’t be more delicious and worthy of repeating. Chocolate and berries are an unstoppable combination, which is why I had to bring the berries to the s’mores sandwich party.

That right there is how I like my mallows toasted; a singe, but not entirely en fuego. I like some of the marshmallow to remain intact inside, so the goo factor is high but not too high. These are important distinctions, people.

You could stop right there and toss those bad boys onto any ordinary chocolate, but I’m taking it a step further. And once you go berry, you’ll never go back.

I’ve doubled up on the fruit factor by laying down a piece of creamy raspberry-flavored chocolate (Ghirardelli is my fave!) and then a heaping tablespoon of smashed raspberries. Sound messy? You better believe it. It’s a sticky, gooey, juicy hot mess of a concoction that is absolutely, positively worth wearing on your face and on your clothes.

Stack of s'mores with chocolate and raspberries

Ingredients 

  • 4 marshmallows
  • 4 pieces raspberry-flavored chocolate
  • 1/2 cup raspberries, smashed lightly
  • 4 graham cracker sheets, halved

Instructions 

  • Toast the marshmallows over an open flame.
  • Place a square of chocolate atop four graham cracker halves then top the chocolate with a spoonful of the smashed raspberries.
  • Place the toasted marshmallow atop the raspberries then sandwich each s'more together with the remaining graham crackers.
