Cottage Cheese Chocolate Mousse

Satisfy your sweet tooth with rich, creamy and protein-packed Cottage Cheese Chocolate Mousse. This recipe is made with just four ingredients and also transforms into Fudgesicles!

Ingredients  

  • 1 1/2 cups cottage cheese (4% preferred)
  • 3 Tablespoons unsweetened cocoa powder
  • 1/4 cup maple syrup
  • 1 1/2 teaspoons vanilla extract
  • Peanut butter or protein powder (optional)

Instructions 

  • Add the cottage cheese, cocoa powder, maple syrup, vanilla extract and 1/4 teaspoon kosher salt to the bowl of a food processor. Blend until smooth, 1 to 2 minutes.
  • Transfer the mousse to serving glasses and serve immediately or store in an airtight container in the fridge until ready to serve.

Notes

  • For more protein, and to customize the flavor, add 3 tablespoons creamy peanut butter or 1 scoop protein powder to the food processor along with all other ingredients and blend until cream
  • Refrigerating the mousse will give it more of a pudding-like consistency
