Preheat the oven to 350°F. Line a standard 12-cup muffin pan with paper liners.
In a medium bowl, whisk together flour, protein powder, brown sugar, baking soda and 1/2 teaspoon kosher salt.
In a separate medium bowl, whisk together the bananas, Greek yogurt, eggs, olive oil and vanilla extract.
Add the wet ingredients to the dry ingredients and stir just until combined.
Stir in the chopped nuts or chocolate chips (optional).
Divide the batter evenly among the muffin pan cups, filling each cup 3/4 full. Top the muffins with additional chopped walnuts or chocolate chips, if desired.
Bake the muffins until a toothpick inserted comes out clean, 18 to 22 minutes.
Remove them from the oven and allow them to cool in the pan for 10 minutes before serving.
