Grilled Peaches

Fire up the grill for perfectly caramelized and juicy grilled peaches! Top them with vanilla ice cream and a drizzle of bourbon caramel sauce for the ultimate summer dessert.

Ingredients  

  • 4 medium peaches
  • Extra-virgin olive oil, for brushing
  • Vanilla ice cream, for serving 

Instructions 

  • Preheat a grill or grill pan to medium heat.
  • Halve the peaches and remove the pits. Brush the cut side of each peach half with the olive oil. Arrange the peaches on the grill, cut side down, and grill until warm and caramelized, about 3-4 minutes.
  • Transfer the peaches to serving plates, top each with a scoop of ice cream and drizzle with caramel sauce (optional). Serve immediately. 

Notes

  • I like my peaches soft but still a bit firm, so I don’t flip them. But if you prefer them extra-soft, go ahead and flip the peaches, grilling for another 2-3 minutes on the other side.
  • Stovetop Method: Use a grill pan on your stovetop. Heat the pan over medium-high heat, then follow the same steps for grilling peaches as you would on an outdoor grill.
  • Oven Method: Preheat your oven to 375°F. Place the peach halves, cut side up, in a greased baking pan. Put a small piece of butter in the middle of each peach and bake for about 10-15 minutes, until they are tender and slightly caramelized. Pro tip: Sprinkle a little brown sugar and cinnamon on top of the butter before baking—it’s so dang good!
