Orange and Honey Granola Parfaits

Ingredients  

  • 2 1/2 cups old-fashioned oats
  • 3/4 cup sliced almonds
  • 3/4 cup shelled pistachios, roughly chopped
  • 1 cup sweetened flaked coconut
  • 1/2 cup honey
  • 1/3 cup melted coconut oil
  • 1/4 cup Florida's Natural Orange Juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon kosher salt
  • 1/2 cup raisins
  • Yogurt and fruit, for serving

Instructions 

  • Preheat the oven to 325°F. Line a baking sheet with parchment paper.
  • Add the oats, almonds  and pistachios to the baking sheet. Stir the ingredients together then spread them into an even layer. Bake for 10 minutes, stirring halfway through, then remove the baking sheet from the oven and transfer the oats and nuts to a large bowl.
  • Stir in the flaked coconut. 
  • In a separate medium bowl, whisk together the honey, coconut oil, orange juice, cinnamon, ginger and salt.
  • Pour the honey mixture over the oat mixture and toss until well-combined. 
  • Return the granola to the lined baking sheet, spreading it into an even layer.  
  • Bake the granola for 25 minutes, stirring halfway through, until it is golden brown, then turn off the oven and leave the baking sheet in the oven for an additional 10 minutes.
  • Remove the granola from the oven, stir it one more time then let it cool completely on the baking sheet. (It will crisp as it cools.)
  • Once the granola has cooled, stir in the dried fruit and serve or store the granola in an airtight container at room temperature for up to 2 weeks.
