Ingredients
1poundfresh green beans, ends trimmed
2Tablespoonsextra-virgin olive oil
1/2teaspoongarlic powder
Lemon, for serving
Grated Parmesan cheese, for serving (optional)
Instructions
Preheat the oven to 425°F with a rack in the center.
Add the green beans to a large baking sheet, then drizzle them with the olive oil and toss to combine. Sprinkle on the garlic powder and 1/4 teaspoon kosher salt, then toss until combined. Arrange them in an even layer, then roast until tender and charred slightly, 15 to 20 minutes, tossing them once halfway through.
Remove the beans from the oven then zest the lemon on top. Halve the lemon and squeeze juice on top, then toss and serve topped with grated Parmesan cheese.
Notes
Topping ideas: Try topping your roasted green beans with any of the following for extra flavor and texture (add these once they come out of the oven):
Toasted almonds or pine nuts
Candied pecans
Finely chopped fresh herbs (like basil, parsley or chives)
A drizzle of sesame oil and/or a sprinkle of sesame seeds
A pinch of red pepper flakes for a little heat
Crispy chopped bacon
A drizzle of balsamic glaze
To store: Store leftovers in an airtight container in the fridge for up to 4 days.
To reheat: Reheat in a 400°F oven for 5 to 7 minutes or in an air fryer until warmed through and lightly crisp again.
