Pesto Eggs on Cheesy Toast Recipe

This recipe (originally created by TikTok’er Amy Wilichowski) is aimed at substituting the butter or oil traditionally used for frying eggs with a much more herbaceous, flavor-packed alternative: pesto.

Because of all of the olive oil in pesto, it functions as a fat alternative and prevents the eggs from sticking to the pan while imparting the most amazing flavor.

How Do You Make Pesto Sauce?

I’ve been a pesto super fan for nearly two decades. It was (and is) a homemade staple in our house, all thanks to my mom Noni’s legendary recipe, which is the perfect balance of fresh basil, garlic, Parmesan and olive oil. It makes these eggs a total home run, but if you’re in a pinch, yes, you can use a store-bought pesto sauce instead.

Pesto Eggs on Cheese Toast Recipe
Prep Time 5 minutes
Cook Time 7 minutes
Servings 1 serving

Ingredients 

  • 1 slice bread of choice
  • Unsalted butter
  • 3 Tablespoons grated Parmesan cheese
  • 3 Tablespoons homemade or store-bought pesto
  • 2 large eggs
  • Avocado, olive oil, crushed red pepper, sea salt and pepper, for garnish

Instructions 

  • Spread one side of the bread with the butter, then sprinkle it with the Parmesan cheese, pressing it firmly into the butter.
  • Place a small skillet over medium heat then add the bread, cheese side down. Cook the bread until the cheese is melted, golden brown and crispy. Set the toast aside.
  • Add the pesto to the same skillet, spreading it around in an even layer. Crack the eggs into the skillet and cook until the whites are cooked through the the yolks reach your desired level of doneness.
  • Top the toast with smashed avocado, then add the pesto eggs. Garnish with a drizzle of olive oil and a sprinkle of crushed red pepper, salt, and pepper, then serve.

  1. In the recipe and others I’ve seen, it seems like you fry the eggs, but in the photos it looks like they are scrambled. I guess both would work – do you have a preference?

    I believe this recipe is a winner. A few years ago, when visiting my son in CA, I took him to breakfast at a restaurant called “Jar”, I think. I ordered the eggs in pesto over rice, it was totally delicious. Egg breakfasts over sticky(not sweet) rice can be a great alternative to potatoes, or toast, etc.
