I have a thing for chicken wings. And while I’m not one to shy away from deep frying (See: Easy Homemade Churros), there is a time and a place to bring the oil to a boil. Super Bowl Sunday is not that time, nor that place.
I don’t want to be forced to man a fiery, bubbling cauldron when there are game-winning touchdowns and Super Bowl commercials at stake. Who wants to risk missing a minute of the Clydesdales in their prime?

Ingredients
For the chicken:
- 2 1/2 lbs chicken wings, drumettes and flats separated (tips removed)
- 2 teaspoons vegetable oil
- 1 teaspoon sesame oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For the peanut sauce:
- 2/3 cup chunky peanut butter
- 1/4 cup hot water
- 1 teaspoon grated fresh ginger
- 1 Tablespoon fresh lime juice
- 1 teaspoon fish sauce
- 1 Tablespoon low sodium soy sauce
- 1 Tablespoon honey
- 1/2 teaspoon crushed red pepper flakes (or more, to taste)
Instructions
Make the chicken:
- Preheat the oven to 400ºF.
- Rinse the wings and drumettes, pat them dry and transfer them to a large bowl. Toss the wings with the vegetable oil, sesame oil, salt and pepper. Position the wings on a baking rack placed on top of a foil-lined baking sheet, spreading the wings into a single layer to ensure they aren't touching.
- Bake the wings, rotating the pan half-way through, until they're fully cooked, 45 to 50 minutes. While the wings are baking, prepare the sauce.
Make the sauce:
- In a medium bowl, whisk together all of the sauce ingredients. Taste and season the sauce with salt, pepper and additional crushed red pepper flakes, if desired.
- Remove the wings from the oven and transfer them to a large bowl. While the wings are still hot, add the prepared sauce to the bowl, tossing to thoroughly combine. Serve immediately.
Kelly's Notes:
- Depending on the type of peanut butter you use, you may need to thin the sauce additionally with more hot water. If the sauce is too thick, add 1 more tablespoon of hot water at a time until it reaches your desired consistency.

Add adobo to the wings. Always a good idea!
Second thing:
Why rotate the pan instead of the wings? Isn’t it the same temperature if you rotate the pan? Shouldn’t you rotate the wings to get them from both sides?
Hi Jose! Rotating the pan helps to make sure the hotter parts of the oven are closest to all areas of the baking sheet to guarantee even cooking.
I also made this and it was delicious. I added a little Sriracha and topped with some fresh chopped cilantro. Yum.
I think next time I will bake at a higher temp to get the wings a bit crispier, otherwise will absolutely make again.

I baked the wings on a screen over a pan to let drippings fall… came out crispy! I like the sauce and an additional touch of Sriracha…Yumm!

Totally too much Peanut Butter. I also added more water to thin. I brushed the sauce on, placed back in oven, but then lost the crispness of the chicken. Recipe is not good. Will not try again.

The sauce was not good. It may taste better with coconut milk to thin out the peanut butter rather than water.

This is a great recipe! Let me first say that if u don’t like peanuts, or peanut butter, don’t eat Thai food! Second, I’d like to tell u what I did different! I didn’t toss the wings before baking in grease, I mean oil. Also I don’t eat salt. So I washed my wings, peppered them, then baked. I made my sauce in my small crock pot because it tastes better heated.. I don’t measure anything ever but I make Thai and Asian food all of the time, I could live off it. So in my sauce I put in the crunchy peanut butter, sweet chili sauce, water cilantro, (extra) ginger, soy sauce. I didn’t put in the lime or pepper flakes, no honey or fish sauce either. It’s amazing. Might cut down on the greasy but I love the peanut favors. I have crushed peanuts I might add too! Just an idea. I think it’s closer to authentic and the flavor sad amazing! Just n idea! Hope u like it as much as I do!
These wings were awful. I agree with the last comment. There’s way too much peanut butter on these but somehow they don’t taste like anything. They’re just a big oily mess.

I tried these and followed the recipe to a tee and did not enjoy this recipe. All i could taste is peanut butter. I then doubled the rest of the ingredients and still PEANUT BUTTER.
Found this recipe on Pinterest. I added a little extra honey to our sauce since we used peanut butter with no added sugar. My family really liked it and we have no leftovers, including my 5 and 2 year old kids. I especially like the technique for cooking wings and will use it again. Thanks!
