My thought process leading up to this latest creation was simple: Leftover pizza dough is sitting in my fridge. It’s 8 a.m. I love carbs. I love butter. Hello, Pizza Dough Cinnamon Rolls.

As history has shown, I’m all for baked goods that don’t involve yeast (see examples 1 through 789 here). There’s no proofing. There’s no rolling. Heck, there’s even no mixing if you go the store-bought pizza dough route.

And since I’m always in need of a new way to use up leftover pizza dough, ditching savory for sweet seemed like the perfect solution to the morningtime munchies.

Pizza dough brushed with butter, sprinkled with cinnamon and sugar, and drizzled with vanilla glaze? I’ll skip the pepperoni any day for that.

So next time you’re stocking up on store-bought pizza dough, or whipping up a yeast-free DIY batch, double-up and keep one in the freezer for a 35-minute journey to the ultimate Pizza Dough Cinnamon Rolls.

Ingredients
For the cinnamon rolls:
- 4 Tablespoons unsalted butter, melted, plus more for greasing pan
- 2 teaspoons cinnamon
- 1/3 cup sugar
- 1 pound homemade or store-bought pizza dough, at room temp
For the glaze:
- 4 Tablespoons unsalted butter, at room temp
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 6 Tablespoons hot water (until desired consistency)
Instructions
Make the cinnamon rolls:
- Preheat the oven to 375ºF. Grease an 8×11-inch baking dish with unsalted butter.
- In a small bowl, stir together the cinnamon and sugar.
- Lightly flour your work surface then roll out the dough into a 16×10-inch rectangle. Brush the dough all over with the melted butter then sprinkle it with the cinnamon-sugar mixture. Starting at the long end closest to you, tightly roll the dough into a log. Cut the log into 12 rolls, about 1 1/2-inches each. Arrange each roll in the prepared baking dish about 1 inch apart.
- Bake the rolls for 20 to 25 minutes until the dough is fully cooked. (See Kelly’s Notes.) Remove the rolls from the oven and let them cool slightly while you make the glaze.
Make the glaze:
- In a medium bowl, stir together the butter, powdered sugar and vanilla extract. Whisk in the hot water 1 tablespoon at a time until the glaze reaches your desired consistency. Drizzle the glaze over the slightly warm cinnamon rolls and serve immediately.
Kelly’s Notes:
- Pizza dough is easier to roll out when it’s at room temperature versus when it’s cold.
- Pizza dough gets crispier on the edges than traditional cinnamon roll dough so when in doubt, underbake the rolls to guarantee they remain soft.
- Unlike cinnamon rolls made with traditional dough, these rolls are denser in consistency and chewier in taste as a result of the pizza dough.

I made these in my Instant Omni Plus on Bake at 350 for 12 minutes for 8 rolls. Instead of melting the butter, and also instead of the sugar, I fork blended about a 1/4 cup of maple syrup and 4 Tbsp of softened butter. I spread that on the dough then sprinkled cinnamon on top until I thought it was enough. NOTE: I never think cinnamon rolls have enough cinnamon. I didn’t bother with the glaze. Thanks for inspiring me to make the best cinnamon rolls ever. (Well, except for Cinnabon, which is only a distant memory for me, but I do recall their cinnamon rolls fondly, especially the icing.)

If you let the unbaked rolls rise in the prepared pan for about 90 minutes (covered in a warm place) before baking, they turn out more like traditional cinnamon rolls.

I made these tonight! They are very good, I did make a couple adaptations. When rolling it out I used crushed potato flakes instead of flour to keep it from sticking. I did this to help keep the dough softer. Then I did brush on heavy whipping cream at the end before baking, SO GOOD!

Hi Sal! The cinnamon rolls might harden slightly, just like regular cinnamon rolls, but they should soften when reheated in the microwave. :)

Had pizza crust setting in my fridge left over form shopping before and had extra for making pizzas and had no idea what to do with it before it went bad. I simply googled what else I could do with pizza crust and came upon this recipe and was blown away by how yummy this was. I love it so much I made them again soon after the first and added little but if cream cheese to the icing and this has totally changed me into making cinnamon rolls instead of buying a $5 can of only eight that is not enough for a family of 5. My family loves them so much its almost made at least once a week! Thank you!

I made these today after I picked up a bag of dough from the market last week. I got the dough with making cinnamon rolls in mind. This is such a simple , but really good recipe! Everything worked out perfectly! I made half with your glaze recipe, and added orange to the other half of the glaze. Try using softened cream cheese instead of butter, omit the hot water and just use some milk to thin it slightly. Put it on warm or hot cinnamon rolls .
Try organic powdered sugar. Organic and conventional powdered sugar use different anti-clumping agents. I notice a taste difference and use organic for icing where it’s flavor makes a difference, but use conventional when it’s just another baking ingredient.

We make homemade pizza regularly & this time I decided leftovers were not going to waste! Made pizza Sunday night & circumstances were such that the dough ended up in a sealed container in the fridge until Tuesday morning. They were still incredible! A bit crispy on the edges here & there, but watched them carefully & really enjoyed tender chewiness of the rolls. Didn’t have unsalted butter, regular worked fine & think I prefer salted because it’s a very sweet icing even with the salted butter. Thank you for the recipe. Will definitely use again!

I thought I would surprise my wife this morning with cinnamon rolls. Followed the recipe to a T. Dough was at room temp. They never changed shape like I thought they would. Utterly disappointed, can’t imagine what went wrong.

Thank you! This recipe is exactly what I needed. I always have bags of dough in my fridge for pizza and rolls but often find myself trying to use it up before it expires.
I used half the glaze on a first batch then refrigerated the rest for a second batch a few days later. I also prepared the rolls then put them in the fridge overnight and baked in the morning after bringing back to room temp. Worked great!
Could I grease the pan instead of using parchment?

It is March 2020 and I and my 13 y/o granddaughter are stuck at home. Shopping is not so easy!! I had some pizza dough in the refrigerator and not much to put on it. These are amazing! I found out 2 years ago I’m allergic to wheat which is awful when you love to bake and eat things lol I did this recipe with my leftover Bob’s redmill pizza dough mix and they were so delicious!

Can these be frozen after baking with any success?
Hi Brandy – I’ve never tried freezing these cinnamon rolls so I’m not certain how the texture/taste would be once thawed. Let me know if you give it a shot!
My mom used to make cinnamon bread out of extra homemade bread dough. She would make a syrup out of brown sugar and cinnamon to pour over top after it was cooked which would harden to a sort of candy. I am drooling just thinking about it .. absolutely divine!!

Can you make these rolls the night before and store covered in frig to bake next morning?
Hi Susie! I wouldn’t recommend doing that, as pizza dough has more of a tendency to dry out vs. traditional cinnamon roll dough.
Hi, If I added some yeast to this recipe would it make them more fluffy or make the dough rise a bit more? I tried this with normal pizza base mix and I found that the dough was much less dense than expected. Nevertheless they tasted divine! Thanks in advance x
Hi Sara – I wouldn’t recommend that as it could cause the dough to taste “yeasty” and too much yeast could actually cause the dough to go flat.

I used Jiffy boxed pizza dough. They came out so good! My husband and kids devoured them. Personally I will cut down the amount of butter and sugar inside and add more cinnamon because I like them let sweet on the inside but loads of icing.

I made cinnamon~raspberry logs using this recipe as a starter. I had one package of a gourmet pizza dough kit and then a store-bought pizza dough. I was curious about the yeast taste of the kit one so used both (separately). I rolled out 6 rectangles for the logs and spread butter, raspberry jam then sprinkled with cinnamon sugar. Then rolled the rectangles into logs, put on Pam sprayed cookie sheets and baked as above. The syrupy inside did ooze out but I ended up using it as a candy-type of glaze so was able to skip that extra step. The yeast ones are prettier and lighter, and crust tastes much better, but I wouldn’t hesitate to use store-bought again if I had one handy. These are outrageously delish. Thanks for sharing!

I bake bread every day, so I would like to give a little advice to make these much higher and less dense. I let them rise until they double in size, before baking. Great result and so light and fluffy!

How do you let it rise? Do you cut the dough then let it rise before putting them in the oven?

Hi Julia – the pizza dough is much denser and chewier in texture than traditional cinnamon roll dough, but the taste is the same buttery cinnamon-sugar deliciousness!
