Zucchini is one of my absolute favorite vegetables. It’s genuinely versatile in a way that not many vegetables are. You can roast it, stuff it, spiralize it, toss it in pasta, or, and this is my favorite, bake it into something sweet for the easiest, tastiest way to sneak in extra veggies (hello, mom win!).
And here’s the thing about zucchini in baked goods: you genuinely cannot taste it. What it does is add so much moisture and a sneaky serving of vegetables that absolutely nobody will detect. I’ve served a four-year-old who declared vegetables “disgusting” my zucchini oatmeal chocolate chip cookies, and she asked for thirds. I rest my case. My zucchini banana bread and mini zucchini muffins with chocolate chips have pulled off the same trick, and both freeze wonderfully for an easy breakfast, snack or lunchbox addition all week long.


When it comes to savory recipes, zucchini is just as hardworking. Hollow it out and add your favorite taco toppings for stuffed zucchini boats, slice it and layer it into a cheesy zucchini casserole, or shred it for crispy zucchini fritters that work as a side dish or a snack the kids will actually eat. It’s also incredible shaved raw into thin ribbons and tossed with sweet summer corn, crispy bacon and a homemade basil vinaigrette for a simple zucchini salad.

Yes! And if you’re dealing with a garden surplus, the freezer is your best friend. For shredded zucchini (great for baking), squeeze out as much water as you can, portion it into 1-cup or 2-cup amounts, and freeze flat in zip-top bags. It keeps for up to 3 months. Thaw it in the fridge overnight and give it another squeeze before using. For sliced or diced zucchini, blanch it briefly in boiling water, pat dry, and freeze in a single layer on a baking sheet before transferring to bags โ this helps it hold its texture better when cooked.
Honestly? Baked goods are the gateway. Start with something they already love (muffins, cookies, banana bread) and add shredded zucchini. The texture is completely invisible and the flavor is nonexistent. Once you’ve got a win there, try it in pasta sauces, soups and casseroles where it blends right in. For savory recipes, it depends on the dish and personal preference. The skin is tender and totally edible. For baked goods, I typically don’t bother peeling. The skin shreds right along with the flesh and is completely undetectable once baked. The only exception? If you’re using a very large zucchini with thick, tough skin, a quick peel doesn’t hurt.
